Description: A thick, liquid sweetener made from brown rice. Amber colored with a mild flavor, it is half as sweet as white sugar. Brown rice syrup includes a variety of beneficial enzymes. Made primarily of maltose, it enters the blood stream slowly, and contains trace amounts of many vitamins and minerals. Brown rice syrup and barley malt syrup are made from fermented grains, and are less destructive to the body’s mineral balance than regular sugar.
What to look for: Organic.
Uses: Use 1 1/4 cups brown rice syrup to 1 cup sugar, and add pinch of baking soda. Reduce 1/4 cup of other liquid. Use in baking cookies, granola, pies, and puddings. Great in sauces and marinades. Does not work as well in cakes or breads.
