Description: Most commercial cheese comes from cows that are force-fed corn, soybean, and other feed that is often genetically modified and high in unhealthy fats. Raw, organic cheese that is produced from cows fed organic grass, is an excellent source of healthy omega-3 fatty acids, cancer-preventing conjugated linoleic acid, vitamins A and D, calcium and protein.
What to look for: Raw, organic cheese tastes great, and contains vital nutrients that are lacking when pasteurized . Look for them made from organic milk, where the animals are pasture-raised or fed organic grass. “Raw” cheeses are all heated to some degree during production; so if at all possible, find cheese heated to no more than 120 degrees Fahrenheit. Above this temperature, many healthy nutrients, enzymes and friendly bacteria begin to be lost.
Uses: As with raw milk, those who are lactose intolerant may better tolerate it made from raw milk. Always use in moderation as you would all cheese.
Where to find: Health food stores and online resources. The highest quality raw, organic cheeses are available online.
Avoid: Inorganic cheese that is not raw and commercially pasteurized.
