Evaporated cane juice (white sugar substitute)

Description: Unrefined cane juice is off-white and crystalline in appearance. The juice is extracted from the cane and evaporated to produce crystals. It has been further processed to remove most of the molasses flavor and color, which leaves a simple, plain, sugar flavor, while retaining some natural vitamins and minerals of the raw sugar cane.

What to look for: Organic, fair trade, and made from sugar cane grown on sustainable sugar farms and plantations.

Uses: All places you would use white sugar.

Where to find: Health Food Store, online resources.

Avoid: Inorganic, refined.
