Fermented foods are foods processed with enzymes from bacteria, yeast and molds that create gradual beneficial chemical changes in the structure of the foods. Fermented foods can aid in digestion and can balance healthy flora in the gut. Commonly fermented foods are sauerkraut, “Kim Chi” and other cabbage-based salads.
