Fermented Foods


Fermented foods are foods processed with enzymes from bacteria, yeast and molds that create gradual beneficial chemical changes in the structure of the foods. Fermented foods can aid in digestion and can balance healthy flora in the gut. Commonly fermented foods are sauerkraut, “Kim Chi” and other cabbage-based salads. Many fermented foods are available at health food stores and are also easy to make at home. The ancient art of fermentation is quite popular today. Naturally preserved, fermented foods have a long shelf life, retaining their vitamin content longer than non-fermented foods.
