Description: Honey is extracted from flower nectar by bees. It comes in a vast variety of flavors and concentrations of fructose, depending on the source of the nectar, and is sweeter and vastly more nutritious than sugar. In it’s raw form, it contains pollen, propolis, vitamins, enzymes, and trace minerals. Fine textured crystals are characteristic of pure, unheated, unprocessed, raw honey. Honey also has unique healing and curative powers, in addition to its wonderful deep sweetness and flavor.
What to look for: Organic, raw honey, locally produced if possible.
Uses: 3/4:1 honey: sugar ration. Use three-quarters the amount of honey as sugar is called for. Add a pinch of baking soda to baked goods, and reduce baking temperature by 25 degrees.
