Cold Cucumber Soup
A delicious healthy way to beat the heat!
2 large, organic cucumbers, peeled, seeded, and grated
1 clove garlic, finely minced
2 T fresh dill, minced
1-1/3 C organic, full-fat yogurt; try using your own homemade!
2 C organic, free-range chicken broth
sea salt and white pepper, to taste
Combine all ingredients, stir to blend, and chill. Serve topped with fresh mint, diced avocado, or green onions. Serves four.
To serve, ladle soup into chilled individual bowls. Sprinkle with the chopped vegetables, drizzle with extra virgin olive oil, and the chopped parsley or cilantro. Enjoy!
