This is a tasty way to enjoy a vegetable that can be rather unexciting, and it’s a great healthy addition to summer barbecues.
2 med. organic zucchini squash, or 4 small ones
¼ C extra virgin olive oil
1 clove fresh garlic, pressed through a sieve
sea salt & fresh ground pepper, to taste
Preheat grill to medium-hot.
Trim the ends from the squash and wash well. Slice the squash in half, lengthwise. Mix oil and garlic in a small bowl. With a pastry brush, coat both sides of the squash with the oil mixture. Add salt and pepper to taste. Put squash on the hot grill. And cook until it starts to soften and shows grill marks. Then turn it and cook the other side.
