Organic Pasta with Basil and Blue Cheese

Fabulous pasta. Best during fresh basil and tomato season.


  • 12 oz organic rice or spelt pasta
  • 1 pt organic cherry tomatoes, washed and halved
  • ½ medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 T fresh basil, chopped
  • 3 T extra virgin olive oil
  • 2 oz organic blue cheese, crumbled
  • sea salt and fresh ground pepper, to taste

Cook pasta according to package instructions, and drain. Meanwhile, in a skillet, heat the oil and sauté the onion until nearly brown. Add the garlic and cook another minute. Add the tomatoes and basil. Cook until tomatoes soften. Transfer skillet ingredients and pasta to a serving bowl. Mix in cheese. Add salt and pepper to taste.
