Simple Scones


Wheat-Free, Dairy-Free, Refined Sugar-Free Simple Scones

Use organic ingredients whenever possible.

2 C spelt flour
4 tsp baking powder
¾ tsp sea salt
1/3 C sucanat or other raw, organic sugar
6 T raw coconut oil
¾ C almond, rice or soy milk
1 lg. egg
½ C fresh berries, or dried currents, raisins or cranberries

Heat oven to 375 degrees.
In a large mixing bowl, combine flour, baking powder, salt and sugar. Mix well. Cut in coconut oil. In a separate bowl, combine milk with beaten egg. Combine wet and dry ingredients, barely mixing, gently add fruit. Using a large spoon, scoop out approximately ¼ cup of batter at a time, dropping 3 inches apart onto oiled baking sheets, do not pat into shape. Bake for 15 minutes or until golden brown.
