Tofu and greens is a well-known, basic meal found at most vegetarian restaurants. You can count on finding it in both markets and from street vendors throughout Southeast Asia. In some cultures, it’s as familiar as a peanut butter sandwich is to us; for other people, it’s a wonderful new addition to their repertoire of healthy cooking.
Ingredients
Directions:
Wash the greens very well. Drain and chop. Drain tofu on paper towels until it is dry, then cut into 1” squares, ½ inch thick.
Heat coconut oil in a skillet, and sauté tofu until golden brown on both sides. Remove from pan and keep warm. Add sesame seeds, greens, and a pinch of salt to the skillet.
Cook until greens are tender. Toss greens and tofu together, and season with soy sauce to taste. Serve with a leafy green salad for a wonderfully simple meal.
