Southwest Turkey Soup
A complete and delectable meal in a bowl, and a great way to use leftover holiday turkey.
Ingredients
1 qt organic turkey or chicken stock (can be made from turkey carcass)
2 C organic, free-range turkey meat, cooked and diced
1 lb organic tomatoes, diced
2 C organic fresh vegetables, diced: choice of onion, garlic, red pepper, corn, carrots, celery, mushrooms, green beans, or summer squash
1 T organic plain yogurt or sour cream per serving
3 T extra virgin olive or coconut oil
sea salt and pepper to taste
chili sauce for seasoning
1 tsp cilantro, chopped, per serving
organic baked corn chips, a handful per serving
Directions
Heat olive oil over medium heat in a large pan, and lightly sauté the vegetables. Add the stock, tomatoes, and meat. Cook on low heat for 20-30 minutes, seasoning to taste with salt, pepper and chili sauce. Serve in bowls over tortilla chips. Top with plain yogurt or sour cream and torn cilantro.
