Turkey Meatloaf


Turkey Meatloaf

Serve with mashed potatoes and peas for real home comfort food. Alternatively, serve with a tossed green salad and steamed cauliflower or broccoli. Use all organic ingredients.


  • 1 C oat flakes
  • 2 lbs ground light turkey meat, free-range, organic
  • 1 stalk celery, finely chopped
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 1 medium red pepper, chopped
  • 1 jar tomato sauce (12 oz.) or puréed fresh tomatoes
  • 1 egg, beaten
  • 1 tsp Dijon mustard
  • 1/2 tsp thyme
  • 1/2 tsp marjoram
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1 tsp sea salt
  • 1/4 tsp freshly ground black pepper


Preheat oven to 350°F. Coat an 8-inch glass or stainless steel loaf pan with olive oil.

In large bowl, combine half the tomato sauce and the rest of ingredients, mixing thoroughly. Transfer to prepared pan, shape into a loaf, cover with the rest of the tomato sauce, and bake 1¼ hours, or until internal temperature reaches 165°F.
