Description: Sucanat stands for SUgar CAne NAT ural. It is the extracted and granulated juice of the raw sugar cane. The sugar cane is crushed, juice extracted and reduced to a syrup, and then dried by hand using paddles to form brown sugar granules. This process retains the sugar cane’s natural vitamins and minerals. Unlike turbinado sugar, sucanat is grainy rather than crystalline.

What to look for: Organic, fair trade, and made from sugar cane grown on sustainable sugar farms and plantations.

Uses: Sucanat has a light molasses flavor and is less likely to burn than other forms of sugar, so it is especially good for recipes calling for direct contact with heat such as candy making. It can be substituted for white or brown sugar in equal quantities. One cup of sucanat equals one of cup white/brown sugar.
