Thousand Island Salad Dressing


Kids love this. It’s not only good with salad, but also with fish, eggs, or potatoes. Use all organic ingredients to update this comfort food to a healthy version.

1 C mayonnaise or nayonnaise (non-egg mayonnaise)
¼ C ketchup
2 T dill pickle, minced
1 T red pepper, chopped
1 T onion or chives, minced
1 egg, hard-boiled, chopped
2 T fresh parsley, chopped
1 clove garlic, minced
1 pinch cayenne or chili powder
sea salt and fresh ground pepper
Combine all ingredients. Add salt and pepper to taste. Refrigerate until ready to use.
