Whole Grain Waffles

A special weekend treat

1½ C spelt flour
½ C oat flour*
3 tsp aluminum free baking powder
1 tsp vanilla extract
¾ tsp cinnamon
¼ tsp sea salt
2 eggs, pre-beaten
1½ C almond, oat, rice or soy milk
¼ C melted coconut oil or light flavored extra virgin olive oil
2 C fresh fruit of choice; favorites include blueberries, diced strawberries, apples, peaches and bananas

*Buy oat flour or make your own by blending rolled oats in a blender until powdered.

Combine dry ingredients in medium sized bowl, mixing well. Add in wet ingredients, saving fruit for last and stirring just until well blended. Pre-heat the waffle iron and brush lightly with coconut butter. Distribute batter evenly and cook until golden brown, usually 4-8 minutes depending on your iron. Top with fruit yogurt and a drizzle of pure syrup. Enjoy without delay!

Topping Ideas
Extra berries or diced fresh fruit of choice; plain or fruit yogurt; drizzle of pure Maple or Agave syrup.

Options
Plain Waffles: Omit fruit.
Nutty Waffles: Add ½ cup chopped walnuts or pecans with the fruit, or 1 cup nuts if you prefer to omit the fruit.
Seedy Waffles: Add 3 tablespoons sesame, poppy, chia or flax seeds.
